Chicken Noodle Soup with simple Homemade Noodles

 Homemade chicken noodle soup is the perfect way to make your dollar stretch. 

It also makes use of that leftover fryer chicken you made for dinner earlier in the week.

You can use this same recipe with larger proportions and a leftover turkey. And if you need to get out some steam you can always use a giant cleaver to chop your veggies! 😉


Ingredients:

For the Soup

  • Leftover chicken carcass
  • Water
  • Celery end & 1/1 bunch celery sliced
  • 1/2 lb sliced carrots
  • 1 quartered onion
  • 1/8 C Salt this is approximate - broth making takes a lot of salt, you will want to find the right balance for you with a little trial and error.

For the Noodles

The following amount would be enough noodles for 2 people we times this by 5 for our current household of 8. Which makes 2 days worth of soup for us. Same goes with the vegetable measurements above.
  • 1 C Flour 1 to 1 gluten free, wheat, or white all work great
  • 1 large Egg
  • 2 tsp Salt
  • 1 Tbsp Water

Instructions:

Place the chicken carcass, celery end, onion quarters, and about 1/8 cup of salt into a large pot (at least 8 quarts). Cover with water and bring to a boil. Let boil for at least 30 minutes. Turn off broth and pour through strainer into bowl. Return broth to pot and return to a low boil.

Slice Carrots & Celery and add to broth. If desired pick any chicken meat off the bone and add to broth as well. While carrots and celery boil make your noodles.

Mix all ingredients in a large bowl. Once you cant mix any further with a spoon use your hands to combine and mix the dough further. It is a dry dough and will be crumbly - I prefer it that way, but if you don't, simply add a little extra water bit by bit until it is the consistency you want.

Roll the dough out to 1/4" thick and slice into 1/2" strips with a pizza cutter. These are very fat noodles, and have a texture that almost combines noodles with dumplings - it is my grandmother's recipe and my kids love them!

Once the carrots are tender add the noodles - boil till they are cooked through, 10-15 minutes. Salt and pepper soup to taste and serve.
